Marinated Mozzarella

Kristine requested this recipe, so I'm posting it here. It was a big hit with my family.


Marinated Mozzarella

Serving Size : 10 Preparation Time :0:45
Categories : Appetizers & Snacks

1/3 cup olive oil
1 tablespoon chopped oil-packed sun-dried tomatoes
1 teaspoon dried parsley
1 teaspoon crushed red pepper
1 teaspoon dried basil
1 teaspoon minced chives
1/4 teaspoon garlic powder
1 pound mozzarella cheese, cut into 1" cubes

In a large resealable plastic bag, combine the first seven ingredients; add cheese cubes. Seal bag and turn to coat; refrigerate for at least 30 minutes. Transfer to a serving dish; serve with toothpicks.

Happy New Year! I am catching up on blog reading today. It feels like forever since I have had a chance to sit down and read. We are still in KC but leaving tomorrow to head for home. Hmm, it looks like you use regular mozzarella, not the buffalo? (I was thrilled to find some on clearance for $1.99/lb., I guess fresh mozzarella isn't a big seller in Stickville, lol.)
